Sourced locally our sour cherries hale from upstate NY, taken at peak season. We chose Montmorency sour cherries for its intense flavor & color. These ruby jewels are not only packed with flavor but a nutritional powerhouse found to help reduce sore muscles & inflammation.
Originating in the Indian subcontinent, masala chai is made by brewing black tea with spices & herbs. We use DONA chai concentrate with warming spices: cinnamon, cardamom, clove & ginger ground fresh daily for peak flavor & antioxidant boasting properties.
The thick, dark & vitamin packed syrup: molasses is what’s left after the sugar has been removed from the juice of the sugar cane. We use molasses to add depth of flavor & a touch of color.
We use pure pectin extracted from the peel of lemon, lime, & oranges. Unlike “normal” pectin our pectin reacts to nutrients in fruit - not sugar. Because there’s no chemical additives or stabilizers our preserves have a naturally soft set.

Buttery, tart and slightly unami thanks to the pickled shiso leaves in our Cherry Shiso jam. We used sour cherries but surely you can substitue any cherries you can find just remember to adjust your added sugar a little to match.
